For poached eggs: bring a small pot of water to a gentle simmer, add a splash of vinegar. Create a gentle whirlpool and slide in eggs. Cook 3 minutes for runny yolks.
Spread mashed avocado generously over toast.
Top each slice with a poached egg, microgreens, everything bagel seasoning, and red pepper flakes.
