Make croutons: toss bread cubes with olive oil, minced garlic, salt, and pepper. Bake at 190°C for 12 minutes until golden.
Make dressing: mash garlic and anchovies into a paste with a fork. Whisk in egg yolk, lemon juice, and mustard.
Slowly drizzle in olive oil while whisking constantly until emulsified. Stir in grated Parmesan. Season to taste.
Toss romaine with dressing until evenly coated.
Top with croutons and shaved Parmesan. Serve immediately.
