For 6 servings
Reserve a few chickpeas for garnish. Add remaining chickpeas to a food processor.
Add tahini, garlic, lemon juice, and salt. Process for 1 minute.
With processor running, add ice water one tablespoon at a time. Process 3–4 minutes until very smooth and creamy.
Taste and adjust lemon and salt as needed.
Transfer to a bowl. Use the back of a spoon to create a swirl. Drizzle with olive oil and sprinkle with paprika.
Serve with pita bread, vegetables, or crackers.
